Walnut Shrimp and Spicy Eggplants over Instant Noodles
Dinner. I know it’s missing some green and the walnut shrimp/eggplants don’t look that appetizing, but it definitely was very tasty. I first made the instant noodles—simply putting them in a bowl of water and microwaving. Then I microwaved the leftover walnut shrimp and eggplants, letting the noodles soak up the chicken flavoring and water. Then I basically drained out the water from the noodles and plated it. :P I was inspired after watching the show Master Chef, but obviously don’t have many resources at all. Oh well, just had to work with what I had—a microwave and food taken out of the dining commons. Next time I’ll definitely be taking out some vegetables if possible.
